We are always trying to make the best beer we can, so how does one guarantee a step above that? The simple answer is one can't. To go beyond what has been previously achieved requires experimentation and risk.  Despite how cool an idea was on paper, or promising a base blend was tasting before being put on fruit, the end result isn't certain.

This is why our membership beers are selected after the season and all the candidate concepts are completed. This was also why we waited to complete two full seasons of barrel stock development and taking on fruit before initiating the membership in the first place.
